Trilby's Persimmon Pudding
1 stick margarine
2 cups persimmon pulp
2 cups flour if plain add 2 tsp. baking powder
2 cups sugar
1 cup grated sweet potato
2 eggs
1/2 tsp cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1 cup milk
coconut if desired, I use it myself
Mix together and bake in heavily greased pan about 370 degrees for about 1 hr.
If you use smaller pans don't over bake it.
