Angel Food Cake
This is an Angel Food Cake handed down by the Henry Harbinson family.
Grandma use to beat it all with a spoon no mixer in those days for her.
1 cup cake flour ( for chocolate Angel food sub. 1/4 cup of Cocoa powder for 1/4 cup of the flour.)
1 1/2 cup sifted powdered sugar
1 1/2 to 1 2/3 cups of egg whites about 12 or 13 depending on the size of the eggs.
1 1/2 tsp. cream of tarter
1/4 tsp. salt
1 cup granulated sugar
1 1/2 tsp vanilla
1/2 tsp almond flavoring (Use vanilla for chocolate cake)
Preheat oven 375 and use 10 inch tube pan, ungreased
Measure and sift flour and powdered sugar. Sift together 3 times.
Beat the egg whites, cream of tarter and salt until foamy, gradually add the cup of granulated sugar.
Beat until very stiff. Fold in flavoring. Gently fold in sugar and flour mixture.
I do this in three additions.
Bake about 30-35 mins. hanging upside down to cool.
