Mrs Mildred Propst was busy making up dough which will be
served in the form of bread at lunchtime as her
son-in-law Neil McRee watches the progress.
The kitchen of the Brookwood Restaurant is a busy place every morning.
Most of Mrs. Propst's cooking is from recipes she has in her memory.

At Brookwood
Too Many Cooks Don't Spoil This Stew...

by Carolyn Lancaster, April 26, 1978, The Maiden Times, Page 3

Mrs. Mildred Propst, who lives on the Startown Road, can do almost anything she sets her mind to.

She is a fantastic cook, as many have evidenced from the food at the Brookwood Family Restaurant, where she is employed.

Mrs. Propst also likes to sew, crochet, raise flowers and garden. But, since her retirement she has even joined the N.C. Civil Air Patrol and attends meetings.

Retirement didn't bring on the rocking chair for Mrs. Propst. She works everyday in her son-in-laws' business and time off is spent doing those things she wants to do.

Mrs. Propst has six children, who include Mrs. Vivian McRee, Mrs. Hyacinth Beam, Mrs. Lucille Starr, Wayne, Hal and John Propst.

Cooking just comes naturally for Mrs. Propst after cooking for a family of three boys and three girls.

Now, she hardly ever follows a printed recipe. Her recipes are stored in her head.

She is the type cook who can look at something and tell if it looks right. If it doesn't she just adds some other ingredient.

Recipes she shares with readers today are from memory, but she says most people familiar with cooking might allow different temperatures or add ingredients of their choosing.
